CANTONESE CUISINE
Cantonese Cuisine is the culinary style of Guangdong Province, which was called Canton when the Wade-Giles Romanization of Chinese was in use. Usually not spicy, more steamed food - Dim Sum and Wonton Noodle Soup is a good example. Cantonese food covers a wide range of specialties that makes it one of the most versatile cuisines along the already very diverse Chinese cuisine tree. Whenever China has its own version of Master Chef (or just about any cooking competition), the Guangdong / Hong Kong specialty chefs are among the most recognized. There is a big emphasis on seafood due to the province's proximity to the ocean. Often combining various seasonings, spices to cover a range of noodle, rice dishes, with different variations of rotisserie meats. Slow cooked soups, with the belief that it brings medicinal and health benefits, besides tasting great. Then, there is Dim Sum, which is an entirely different but best described as Chinese style Brunch Tapas.
SZECHWAN CUISINE
Szechwan Cuisine, or Szechuan cuisine is a style of Chinese cuisine originating from Sichuan province in southwestern China. Mostly sautéed dishes, with lots of chilies and oils very spicy. Much of the spicing of regional Chinese cooking is based upon bringing together five fundamental taste sensations – sweet, sour, pungent, salty and bitter. The balance of these particular elements in any one dish or regional cuisine can vary, according to need and desire, especially as influenced by climate, culture and food availability.
